Quick Dinner for a busy day

Slow Roasted Chicken Pieces
Broccoli and Cheese Sauce
Wild Rice Pilaf

Hmm. I wonder how to add recipes to this blog and still have it be streamlined looking.

Basically, I cheated. ;0 That's why it was quick.

1 package of large whole chicken, cut up in pieces
McCormick brand California Garlic Pepper
kosher salt
1 bag of frozen broccoli
velveeta cheese
1 box Uncle Ben's Wild Rice Pilaf

*Lay the chicken pieces in a metal pan with high sides (like a large lasagne pan or a 2" hotel pan) and season liberally with garlic pepper and less liberally with the kosher salt
*Bake chicken at 350 degrees while you run around and get everything else done, including table set and one load of laundry in :)
*Everything else: Start the rice and follow directions on package - very hard!!! (kidding) Then microwave or steam broccoli about halfway; drain liquid. Finish microwaving with small 1-2" chunks of velveeta thrown in, stir when finished.
*When chicken is finished, serve it all. Save the juices from the lasagne pan, pour into a clear glass or measuring cup and refrigerate. The next morning, scoop out the fat that rose to the top, and save the delicious chicken stock in the freezer until you have enough to make soup.
